Foodie Friday: Banana Streusel Muffins

It's Friday! What a better way to start off the weekend than with a slightly sweet, delicious breakfast? Today I'll be sharing with you my recipe for banana streusel muffins. They make a great breakfast on the go, snack, and even dessert!

Banana Streusel Muffins

Ingredients for muffin batter:
4 overripe bananas
2 tbsp brown sugar
1 1/2 tsp vanilla extract
1 tsp ground cinnamon
1/2 cup butter, softened
1 cup white granulated sugar
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 tbsp sour cream

Ingredients for streusel topping:
1/2 tsp cinnamon
1/2 cup flour
1/2 cup brown sugar
1/2 cup pecans, chopped
4 tablespoons of butter, cold

Preheat oven to 350 degrees. Prepare your muffin/cupcake tins, this recipe makes about 20 average size cupcakes or 12 large muffins. This could also make 2 loaves of bread. In a small bowl, mash bananas and combine with brown sugar, vanilla extract, and cinnamon and set aside. In a large bowl, cream together white granulated sugar and butter until light and fluffy. Add in eggs, on at a time, mixing thoroughly to combine after each addition. To the wet ingredients, stir in the banana mixture. Then, sift together flour, baking soda, and salt and pour gently into wet ingredients. Stir until just combined. Add sour cream, mix again until just combined. Add to prepared baking pans.

For the streusel topping, combine flour, brown sugar, cinnamon, and pecans. I like to grate my cold butter and then cut it into the mixture until it's becomes a coarse crumble. Place a generous tablespoon of this mixture on top of each cupcake, more if you're making the muffins and divide in half and spread evenly if you're making loaves.

The cupcakes bake for about 20 minutes, you'll need to adjust cooking time accordingly if you're making these in muffin tins (about 25 minutes) or loaves (about 35-40 minutes.)

Let cool for about 10 minutes and ENJOY! For dessert, I recommend eating these fresh from the oven with a dollop of vanilla ice cream and a drizzle of caramel.

A little fact about bananas, they're the most wasted fruit in the United States. People believe that when they turn brown they're no longer good, but in fact they're even BETTER. When bananas begin to over ripen, they become DELICIOUSLY sweet. DON'T THROW OUT YOUR BANANAS! Freeze them for banana "ice cream," add them to your smoothies, or bake with them. You won't be disappointed!
