Foodie Friday: Banana Oat Pancakes

Happy Friday! Today I'll be sharing my recipe for a quick, healthy breakfast. My banana oat pancakes mix up quickly in a blender, but you can also combine the batter by hand. I top them with fresh fruit and nuts but they're so versatile, you can also drizzle with honey, maple syrup, or spread some Trader Joe's Cocoa Almond Spread in between... SO GOOD.

Banana Oat Pancakes
Ingredients:
1 ripe banana
1/2 cup old fashioned oats
1 egg
1/4 tsp baking powder
1/4 tsp vanilla extract

I put all of the ingredients in my Nutribullet and blend until combined. However, you can mash the banana and mix in all of the other ingredients by hand, the result will be a pancake with a little more texture from the whole oats. After your batter is combined, heat a skillet to medium heat and melt your fat (butter, coconut oil, ghee...) Cook for about 2 minutes per side or until they are browned and cooked through. And that's it! This makes about 5 small pancakes or 3 larger ones. Add your favorite toppings and enjoy!

Bananas: A very healthy carbohydrate, a great source of fiber, rich in antioxidants, contain potassium and magnesium.
Oats: Excellent source of fiber, contains many vitamins and minerals including manganese, phosphorus, copper, B vitamins, iron, selenuim, magnesium, and zinc, and are they only dietary source of the powerful antioxidants named avenathramides.
Eggs: Excellent source of protein, increases the "good" (HDL) cholesterol in your body, contains choline, good source of antioxidants lutein and zeaxanthin.

My toppings:
Strawberries: Healthy Carbohydrate, natural sweetness, rich in antioxidants, provides fiber, vitamin C, manganese, folate, and potassium.
Raspberries: A great source of fiber, high in antioxidants, contain an abundance of vitamin C and trace amounts of vitamin A, B vitamins, calcium, and zinc.
Blueberries: SUPERFOOD. Healthy carbohydrates, provides fiber, vitamins K, C, and maganese and small amounts of vitamin E, B6, and copper.
Pecans: A good source of fiber, protein, unsaturated "good" fats, and are packed with important antioxidants, vitamins, and minerals.
