Foodie Friday: Full Moon Edition

The full moon is quickly approaching and will grace us with its presence this Monday, June 17th, at 4:31 AM EDT. This is the Strawberry Full Moon, named so accurately by those who came before us, which was a sign to begin harvesting the ripening wild strawberries. In honor of this full moon, I am sharing a little treat-- my strawberry breakfast cookies, but they're good enough to eat any time of day!

Strawberry Breakfast Cookies

Ingredients:
1 egg
2 tablespoons of freshly squeezed lemon juice
1/2 cup sunflower oil (or any vegetable oil of your choosing)
1 teaspoon of vanilla
3/4 cup of white sugar
1 3/4 cups whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon of salt
2 cups chopped fresh strawberries

Preheat oven to 350 degrees. Begin my whisking the egg, lemon juice, oil, vanilla and sugar together. Add the flour, baking powder and salt, mix until just combined. Then, gently fold in fresh strawberries. Use a cookie scoop to place on the sheet pan. Bake for 15 minutes or until cooked through and a light golden color.

Strawberries: Healthy Carbohydrate, natural sweetness, rich in antioxidants, provides fiber, vitamin C, manganese, folate, and potassium.
Lemon juice: Healthy Carbohydrate, provides fiber, vitamins C and B6, and potassium.
Sunflower Oil: Rich in vitamins E and K, and contains phytosterols and monosaturated fatty acids (allll the good stuff.)
Whole Wheat Flour: High in fiber, contains protein in the form of gluten, and provides selenium, manganese, phosphorus, and copper.

Now, I know sugar is not the best for a healthy diet. White granulated sugar can easily be replaced with honey or even maple syrup if that works better for you. But every once in while, we all deserve a sweet treat!

Kitchen Witchery
I love to incorporate a little kitchen witchery into my food, specifically when I am baking. Quick tip: to add intention to your food, mix your batter clockwise and to banish, stir counter-clockwise. For my strawberry breakfast cookies, I like to stir clockwise with the intention of an energy filled, productive day.
